Ingredients for two people :
300g fresh spinach-200ml fresh cream-two cloves of garlic-a small red onion-40g of parmesan cheese-olive oil-250g scampis-a pinch of chilli flakes.
Wash the spinach, cook in a wok without fat. When there is no more liquid, set it aside. Pour the cream into a large frying pan and add the crushed garlic cloves, chopped onion and the grated Parmesan cheese. Boil until the cream thickens. Fry the scampi for a few minutes in a little olive oil, add pepper, salt and a pinch of chilli flakes. Cover the spinach with the cream , add the scampis and a little grated parmesan.
