Lemon butter salmon and grilled vegetables



Ingredients for 2 people:

2 pieces of salmon 150g each - 1 fennel - 100g button mushrooms - 8 cherry tomatoes - 1 zucchini - olive oil - butter - 1 tbs of Italian herbs - the juice of a lemon - chopped chives - pepper - salt.


Chop the vegetables, sprinkle with olive oil, herbs, salt and pepper. Put in the oven at 180°C. The cooking time will depend on the size of the vegetables and whether you prefer them crisp or not. I advise to cut the fennel in smaller pieces than the other vegetables and to remove the seeds from the zucchini. I add the whole mushrooms halfway through. Cook the salmon in a drizzle of olive oil for a few minutes in a frying pan, leaving the center half cooked. Sprinkle with lemon, melted butter and chives and serve with the vegetables.
