For one person :
Feta cheese - multicolored tomatoes - various colored peppers - edamame – pecan nuts - ½ avocado - pumpkin seeds - black sesame seeds - olive oil – canola oil - salt - pepper
This recipe is a little richer in carbohydrates (edamame-peppers-tomato), but rich in color and therefore antioxidants. You can make variations in the seeds and colors. Remember not to always use tomatoes and red peppers! Aim for the colors of the rainbow.
