Salmon and creamy leak and cauliflower mash

Ingredients for 2 people:

300g of salmon, 1 lemon, chives, 1 small cauliflower, two small leeks, 100g grated Gruyere cheese, 50 ml fresh cream, clarified butter, salt and pepper, butter, olive oil.


Cut the leeks into thin slices and fry them in a little olive oil. When they are tender, set aside. Cook the cauliflower florets in boiling water. Remove the water and add salt, pepper, cheese and cream. Blend well and add the leeks. The leeks can be blended in or simply added. fry the salmon in a little clarified butter. Cook the salmon until it is half cooked. Drizzle with melted butter, lemon and chives. Serve with leek fondant and a salad of arugula, baby spinach, cucumber slices, pumpkin seeds, olive oil and apple cider vinegar.
