Salmon and scallop ceviche


Ingredients for 2 people :

150g fresh salmon without the skin - 150g scallops - 1 bell pepper colour of your choice - 1 avocado - 3 tbs of coconut cream - 8 limes - ½ stsp alt - 4 tbs of fresh coriander - 1 small green chilli pepper - 1 small red onion - 10 cherry tomatoes

Cut the salmon and scallops into small cubes. Immerse them completely in the lime juice, add the salt. Cover and leave 30 minutes in the fridge. The acid of the lemon will cook the fish. Cut the tomatoes, avocado and peppers into cubes. Finely chop the coriander, chilli bell pepper and red onion. Remove the fish from the juice of the limes and put it in a dish with the other ingredients. Add coconut cream and lime juice to get the desired taste and consistency. Garnish with fresh coriander.
