Ingredients for two people:
4 eggs - 1 avocado - 12 cherry tomatoes-a small onion- pepper- salt- 2 tbs of fresh corriander - the juice of half a lime - four slices of ketogenic bread (see recipe below) - 1 tsp of erythtritol.
Mash the avocado - the lemon juice - with the coriander. Season with salt and pepper. Slice the onion and cut the tomatoes in half. Fry in a little ghee, add a tsp of erythtritol. Cook until the onions and tomatoes are tender. Add a knob of butter. Set aside in the oven. Scramble the beaten eggs in a little ghee. Serve the eggs with guacamole on toast and the tomato and onion confit. Alternatively: you can replace the guacamole with slices of bacon. You can also add a bell pepper to the confit.
