Vegetarian cheese tacos

Ingredients for 2 people :

300g of coarsely grated emmental cheese, 1 bell pepper, 50ml of sour cream, 1 spring onion, 1/2 tsp of garlic powder, chopped chives, ½ lime, 1 avocado, 1 small tomato, tofu, seitan or falafels, salad.

Prepare grated cheese rounds of about 10-15 cm in diameter. Squash the cheese well by hand. Bake on parchment paper at 180°C until cheese is melted and slightly brown (about 10 minutes). Take the rounds out of the oven and fold them carefully in half with a rack placed over a sink. Fry the seitan / falafels or tofu in a little oil, adding spices of your choice. For example 1 tbs of ras el hanout. Cut up the raw vegetables. Mash the avocado with the juice of half a lime, add salt and pepper. Mix the heavy cream with the garlic, chopped chives, the spring onion, salt and pepper. Top cold tacos with salad, seitan, falafels or tofu, raw vegetables and a little of each sauce.
