Ingredients for 3,10 cm blinis:
40g of lupine flour, 10g of almond flour, 1/2 tsp of baking powder, 1/4 tsp of xanthan gum, 1/4 tsp of salt, 2 eggs, 10g of melted butter, 6-8 tbs of unsweetened almond or soy milk, 5 tbsp of sour cream, the juice of a small lemon, fresh dill, pepper, 3 large slices of smoked salmon. Cut the smoked salmon into strips. Mix the cream with the lemon juice and dill. The amount of dill and lemon should be adjusted according to your taste. You can replace the dill with chives or baby onions. Add pepper, but not too much salt since the salmon is salty. For the blinis, combine the dry ingredients. Beat the melted butter and eggs. Beat in the dry ingredient. Add the end by hand since the dough becomes thick. Add the almond milk and mix well. If the dough is too thick, adjust with the almond milk. Let the dough rest for 15 min. Cook 10 cm blinis in a little olive oil. Be careful to garnish the blinis with cream when they are cold. Serve with a green salad as a starter. You can also make several smaller blinis.
