Ingredients for two people:
2 figs, arugula, wheat salad, 2 tbs of pine nuts, 2 tbs of hemp seeds, a slice of feta cheese, 150g of quinoa, a red bell pepper, olive oil and canola oil, balsamic vinegar, salt, pepper.
Bake the feta cheese for 30 minutes in the oven at 180°C and cut it into cubes. Cook the quinoa in boiling water for 10 minutes, drain. Garnish a plate with quinoa and salad. Place fig slices, diced peppers, feta cheese, seeds and pine nuts on top. Season with oil and vinegar. Season with salt and pepper. Healthy, colourful salad perfect for a light evening meal. Not suitable for a ketogenic diet (figs and quinoa).
