Ingredients for 2 people:
2 balls of mozzarella, 2 avocados, pumpkin seeds, chives, a spring onion, lime juice, a small handful of edamame.
Mash the avocados with a fork, add the juice of half a lime, salt and pepper. Garnish your plate with edamame, slices of mozzarella, add spoonfuls of guacamole, chopped chives, olive oil.
