Smoked salmon salad

Ingredients for one person:

3 slices of smoked salmon, two hard boiled omega 3 eggs, chives, baby spinach leaves, wheat salad, arugula, one spring onion, cucumber, half an avocado, 1 tbs of sunflower seeds, 1 tbs of pine nuts, 2 tbs of homemade mayonnaise, olive oil, salt, pepper.


Gently fry the sunflower seeds and pine nuts in a little oil. Mash the hard-boiled eggs with the mayonnaise and the chopped chives. Place the 3 salads on a plate, add the salmon swirls, the eggs, a few slices of cucumber, the seeds, the diced avocado and the sliced spring onion. Add a little salt and pepper and some olive/rapeseed oil.

This salad is high in protein and very rich in short and long chain omega 3. Take the trouble to prepare a pretty plate!
