Spaghetti bolognaise with tofu

Ingredients for 2 people:

4 thin zucchinis, 300g minced seitan or tofu rosso (bioplanet), 500ml of tomato passata, 150g of button mushrooms, 2 garlic cloves, a small onion, 1 tsp of rosemary, 1 tsp of thyme and 1 tsp of oregano. Herbs can be fresh or dried. Grated cheese of your choice (Emmental, Cheddar, Gruyere, Parmesan...). Olive oil, salt and pepper.

Spiralize the zucchini and remove the seeds. Fry them for a few minutes in a drizzle of olive oil and set aside in the oven. Fry the seitan or tofu in oil for a few minutes. Then add the mushrooms, herbs, onion and chopped garlic and let cook until the cooking juice evaporates. Add the passata and simmer for a few minutes. Garnish two plates with spirals, bolognese and grated cheese.
